4 pcs of small potatoes (baking, sweet or yams); scrubbed clean
24 pcs of clams (in shell, cherrystones); prepared clean
Water (cold)
4 pcs of corn ears (fresh); prepared clean
2 pcs of chickens (broiler-fryer, 2.5 lbs); quartered
1/2 lb of butter (or margarine)
2 pcs of live lobsters (Maine, 1 lb each); prepared clean

Rockweed (or cornhusks)

Instructions:
Saute the chicken with butter on a skillet till browned. Place a (wire) rack on the base of (very large) kettle w/ tight lid.
Add two cups water then arrange the onions together with potatoes on the rack then cover them with the rockweed, in one layer. Add the corn, then (more) rockweeds, then chicken, and lobsters, then clams on top.
Cover them with the rockweed. Cover the kettle then place above moderate heat; let it steam, at about 75 mins till onions, corn, and potatoes become tender.
Take the clams out then place on a bowl; place chicken, vegetables, and lobsters on a platter.
Ladle the broth onto four bowls then serve as a dip for the clams. Melt the butter to be used as a dip. Serve them with the lemon on the side.

Bell pepper (red); sliced into rings
3/4 c of cashews

1 c of zucchini; diced

Ingredients:
Lemon wedges to garnish
1 tsp of hot sauce
1 tsp of celery (seeds)

For the Glaze:

For the Shrimp:

Instructions:

Instructions:

Butter (for sauteing)

1/2 to 1 c of grated cheese (Cheddar)
Instructions:
Melt the unsalted butter on a saucepan above medium-low heat then add in the paprika; stir it for two mins. Add flour then cook for 2-3 mins while stirring constantly. Add (clam) juice then stir till it starts to become thick.
Add quarter cup of milk, sherry and cream; let it simmer at about five mins then add another quarter cup of milk if necessary. Serve the sauce at once or place inside the refrigerator for later.

1/2 c of cornstarch
2/3 c of flour
1 pc of beaten egg (large)
1 c of coconut (freshly grated)
1 c of soda water (ice cold)

Seasoning (Creole)

You add the sourcream then knead dough. Have it divided into six balls that are 3 oz each. You press every ball between 2 waxpaper sheets to flatten then smoothen dough out onto 7-inch diametered circle.
Have the top waxpaper sheet removed then scoop 1/3 c filling at center part of every circle. Using the bottom-paper, you lift & fold a dough edge over filling’s top.
Do the same for the opposite dough edge then firmly press & seal dough around your filling.
Have tamale pieces rolled in plastic-wrap the twist firmly its ends. You steam your tamales atop boiling-water for about 15 mins. Then bake them at three hundred seventy-five degrees Fahrenheit for 11-13 mins ’til golden-brown.

Oysters Rockefeller Recipe
Ingredients:
6 Tbsps of butter
3 Tbsps of finely-chopped parsley
6 Tbsps of finely-chopped spinach (raw)

Instructions:
Have butter melted in saucepan then add all your ingredients excluding salt & oysters. Have mixture cooked over low-heat, stir often for about 15 mins. Pass through fine sieve then set mixture aside.
You create salt layer in pie pans then place the oysters above. Scoop 1 tsp of vegetable-mixture over. Broil the shrimps on preheated four hundred degrees Fahrenheit broiler for 3-5 mins ’til topping browns a bit. Serve at once.

Shrimp Elegant Recipe
Ingredients:
3 Tbsps of butter
1 clove garlic; minced
1/3 c of finely-chopped onions
1 can of mushrooms (sliced); drained
1 lb of peeled & deveined frozen shrimps
1/2 c of chopped bellpepper (green)
1 can of condensed Cheddar-cheese soup
1/4 c of dried sherry
1/3 c of half-and-half
Instructions:
Have butter melted in larges-sized saucepan then you saute the bellpepper, mushrooms, garlic & onions ’til tender. You add the shrimps & saute for 5-7 mins.
You drain excess liquid off then pour over soup, blending graduallt the wine & half-and-half. Stir often while cooking ’til thoroughly heated. Best when served w/ rice.

Crab Meat Shells Recipe
Ingredients:
1 lb of crab meat (lump)
2 pcs of bread slices; trimmed then crumbled
1 c of mayonnaise
1 Tbsp of mustard (dry)
1 Tbsp of Worcestershire

1/16 tsp of hot sauce (Tabasco, or more)
Crumbs (cracker)
Butter (unsalted)
Lemon; cut to wedges
Parsley (fresh); chopped
Instructions:
Combine crab meat, bread slices, mayonnaise, mustard, Worcestershire, lemon juice, and hot sauce; mix thoroughly then fill onto greased (seafood) shells.
Place crumbs on top then dot butter above them. Bake inside the oven (350 degrees F) for half an hour. Sprinkle parsley and wedges of lemon.

Shrimp Newburg Recipe
Ingredients:
1 lb of cooked & deveined shrimps
4 oz of canned mushrooms
1/2 c of cheese (Parmesan)
3 peeled hardboiled eggs; chopped
4 Tbsp of butter
1 garlic clove; chopped
1/2 chopped onion
6 Tbsps of flour
4 Tbsps of dried sherry
3 c of milk
Worcestershire-sauce
Tabasco-sauce
Pepper
Salt
Instructions:
Have oven preheated to three hundred seventy-five degrees Fahrenheit.
Have butter melted then saute the garlic & onions ’til tender. Stir flour in, mixing well. Add milk gradually then stir constantly. You cook mixture ’til sauce is thick. You add sherry then season accordingly.
In another bowl, you combine the parsley, eggs, mushrooms & shrimps. Pour sauce over together w/ 1/4 c cheese into shrimp-mixture. Blend thoroughly.
Transfer into 2-qt casserole then top w/ cheese & dot w/ butter. Have dish baked for 10 mins ’til browned slightly.

Crackling Salmon Recipe
Ingredients:
1 can of truffles (black, small); sliced thinly
8 pcs of filets (salmon); skinned
2 tsps of salt (fine)
1 tsp of pepper (freshly ground)
1 tsp of coriander (freshly ground)
8 pcs of rice paper rounds (8 inch)
8 pcs of chives (fresh); trimmed into 4-inches pieces
3 Tbsps of oil (olive oil)
Truffle oil (to taste)
Hennessy cognac
Instructions:
Cut salmon filets horizontally into butterfly. Arrange slices of truffles on the base of halves then replace the tops, covering the truffles. Season salt & pepper then sprinkle coriander and cognac.
Soften the paper rounds with water till pliable. Place one chive along with saved slices of truffles on the center; top them with salmon with rounded-side facing down.
Carefully fold the paper, enclosing the filling, like an envelope. Transfer them on the tray with seam facing down; cover with the plastic wrapper.
Heat 1-1/2 tablespoons oil onto a skillet above medium-high heat. Saute the wrapped salmon with seam facing up, till golden then turn over then reduce the heat into medium. Continue cooking till done. Transfer onto a plate; serve at once.

Beer Batter for Seafood Recipe
Ingredients:
1 Tbsp of salt
1 can of beer
1/2 c of corn meal
1.5 c of flour; segregated
1 Tbsp of paprika
Instructions:
Mix together cornmeal and half cup of flour. In another bowl mix remainder of the flour, salt, paprika and beer. Dunk oysters, fish or shrimp in flour mixture then dip in the batter then deep fry.

Barbecue Shrimp Recipe
Ingredients:
1 pack of black pepper (store bought)
2 tsps of paprika
1/2 lb of butter
1.5 lbs of butter (unsalted)
1/4 c of lime juice
6 lbs of shrimps (Gulf); heads left on
2 pcs of Laurel leaves
2 cloves of garlic; crushed
Instructions:
Preset oven (300 degrees F).
Scrape sides and base of your baking dish with garlic. Position the two pieces of Laurel leaves on the base of your baking dish. Clean and dry shrimps then layer shrimps on the base of your baking dish on top the Laurel leaves.
Pour lime juice over shrimps. Cube butter then dot it over the shrimps, dust with paprika and pepper (black) so that the entire top layer is colored black.
Pop inside your oven fifteen minutes until shrimps turn pink. Transfer shrimps onto soup dishes, pour sauce over then place a slice of bread on the side.

Instructions:
Clean shrimps well then place inside a baking dish. Throw in the garlic and celery. Wring out fluid from your lemons.
Place cubes of butter then sprinkle salt, hot sauce and Worcestershire over the shrimps. Broil shrimps ’till the butter has melted and the shrimps turn color pink. Bake a few minutes then garnish using wedges of lemon.
