Cashew Shrimp Recipe
Ingredients:
3.5 c of rice (cooked)
1 c of zucchini; unpeeled & chopped
1 pc of garlic clove
1/4 c of peppers (red); minced
1/2 c of onions; minced
1/2 c of veggie oil
1/4 tsp of baking soda
3/4 c of nuts (cashews)
1/8 tsp of pepper
1/4 tsp of salt
1/4 tsp of sugar
1 Tbsp plus 1 tsp of cornstarch
1 lb of shrimps (medium)
Red pepper; sliced into rings
Instructions:
Halve the shrimps lengthways. Mix together cornstarch, soda, pepper, salt then sugar. Marinate shrimps in mixture for fifteen minutes.
Pan fry shrimps for five minutes or until color turns red. Drain shrimps on paper towels. In the same skillet, saute onions, garlic then pepper. Add the zucchini then cook for two minutes.
Throw in the cooked shrimps, cashews and rice. Mix thoroughly cooking in low fire. Transfer to individual plates then garnish rings of pepper over top.
