1 pc of ginger (fresh, 1/2-inch); peeled then grated
2 pcs of garlic cloves (medium); peeled then crushed

1/2 Tbsps of chili sauce (hot, Chinese)
1 Tbsp of soy sauce (light)
1 Tbsp of honey (pure)
3 Tbsps of juice (lemon)
20 pcs of skewers (wooden)
20 pcs of shrimp (medium); peeled then deveined

Instructions:

Combine ginger, garlic, cilantro, honey, juice, and (chili and soy) sauces inside a glass bowl. Add shrimp then toss till coated well. Place inside the refrigerator for one hour, covered.

Ingredients:

Bell pepper (red); sliced into rings
3/4 c of cashews
3.5 c of rice (cooked)
1 c of zucchini; diced
1 clove of garlic (small)
1/4 c of pepper (red, sweet); diced
1/2 c of onion; diced
1/2 c of oil (vegetable)
1/8 tsp of pepper
1/4 tsp of salt
1/4 tsp of baking soda
1/4 tsp of sugar
1 Tbsp and 1 tsp of cornstarch
1 lb of shrimps (medium); shells removed & de veined

Instructions:

Slice shrimps lengthways. Set it aside. Mix together cornstarch, soda, sugar, pepper then salt. Marinate shrimps in for fifteen minutes.

Pan fry shrimps for three minutes until it changes color. Drain on paper towels. Remove oil from pan but leave about two tablespoons in.

Saute onions, garlic then pepper. Throw in the zucchini then cook for two minutes. Add the cooked shrimps, cashews and rice. Mix well.

Transfer to serving plates then garnish using rings of pepper.

Ingredients:

10 oz of frozen spinach; chopped
3 lbs of cooked medium shrimps; shelled & deveined
1 c of flour
1/4 c of butter
3 c of skimmed milk
1/2 c of scallions; chopped
1 c of dry wine (white)
Pepper
Paprika
Salt
2 c of grated cheese (Cheddar)

Instructions:

Preheat the oven into three hundred fifty degrees Fahrenheit. You thaw & drain the spinach then spread it into 13×9″ bake dish then top w/ shrimps.

Have butter melted in small saucepan the add flour, add gradually scallions, wine & milk. Stir while cooking over low-heat ’til sauce is bubbly & thick.

Season w/ pepper, paprika & salt. Have this mixture poured over shrimps then sprinkle w/ cheese. Have dish baked w/o cover for about 35 mins ’til bubbly.

Grilled Shrimp in Apricot Hoisin Sesame Glaze Recipe

Ingredients:

For the Glaze:
1 Tbsp of oil (olive oil)
2 Tbsps of garlic (fresh); chopped finely
1/4 c of sesame seeds
1 Tbsp of ginger root (fresh); chopped finely
1 c of apricot jam (or preserves)
8 oz of Hoisin sauce

For the Shrimp:
2 lbs of large shrimp (fresh); cleaned
2 Tbsps of garlic (fresh); chopped finely
1/8 c of soy sauce
2 Tbsps of oil (olive oil, extra virgin)

Instructions:

Heat the oil on a saucepan above medium-high heat then add garlic, ginger, and sesame; saute for two mins. Add Hoisin and apricot jam; stir thoroughly.

Lower down the heat into medium then let it simmer. Once simmering, reduce the heat, keeping the glaze warm.

Combine garlic, olive oil, and soy; toss with shrimp then let it marinate for 4 hrs. Secure the shrimp on skewers; grill for two mins each side till done.

Take the out from the skewers and transfer on a (heat proof) bowl; pour over the glaze and toss till coated well.

Serve at once or serve chilled.

Lobster-Pineapple Curry Recipe

Ingredients:

2 Tbsps of butter (or margarine)
2 Tbsps of bell pepper (green); chopped
2 Tbsps of flour
1/4 tsp of curry (powder)
3/4 c of broth (chicken)
8 oz of canned pineapple (chunks); drained
1/4 c of chestnuts (water); diced
1/4 c of nuts (cashew)
8 oz of packed lobster tails

Instructions:

Boil the lobster as stated in its package instructions. Cut the (underside) membrane then remove the meat inside the shells; save the shells. Slice the meat to half inch thick.

Melt the butter inside the saucepan then saute bell pepper for 5 mins till tender. Add flour and stir constantly.

Gradually add the broth along with curry, while constantly stirring. Cook above gentle heat till mixture becomes thick; stir constantly.

Add lobster, pineapple, chestnuts, and cashews; let them heat through. Spoon the mixture onto the shells and serve at once with (seasoned) rice.
