10 oz of frozen spinach; chopped
3 lbs of cooked medium shrimps; shelled & deveined
1 c of flour
1/4 c of butter
3 c of skimmed milk
1/2 c of scallions; chopped

Paprika
Salt
2 c of grated cheese (Cheddar)

1/2 c of butter (or margarine)
2 Tbsps of flour
1/2 tsp of salt
1 c of cream (light)

8 oz or 1 lb of crabmeat (lump, fresh or frozen)
3 Tbsps of sherry
Instructions:

Ingredients:
1 tsp of Worcestershire-sauce
1 Tbsp cornstarch mixed w/ 1 Tbsp water
4 large-sized oranges
1/2 tsp of garlic; minced

1 & 1/2 Tbsps of veggie oil
16 large-sized uncooked shrimps: peeled & deveined
1 tsp of light-brown sugar
Instructions:
Squeeze out juices from halved oranges.

Ingredients:
1 & 1/2 c of onions (yellow); diced into 1/4 inch
4 Tbsps of oil (olive)
1/2 lb of sausage (smoked); sliced into 1/4 inch rounds
1 c of pepper (red); diced into 1/4 inch
1/2 pineapples (fresh); diced into 1/2 inch
1 tsp of fresh leaves of thyme
1/2 tsp of turmeric
1 tsp of coarse salt
1 diced mango; 1/2 inch each
1 diced papaya; 1/2 inch each
1 sliced starfruit; 1/4 inch each
1 c of Arborio
2 & 1/2 c of chicken stock
1 Tbsp of garlic; minced
2 Tbsps of rum
2 & 1/2 lbs of prawns
Instructions:
Have the prawns marinated in oil then season w/ crushed pepper & coarse salt.
Pour 1/2 oil into saucepan placed over mid-high heat then cook your onions ’til translucent. You add the rice, salt, turmeric & thyme, stirring well.
Pour over the stock, stirring once then adjust on low-heat for 20 mins “til everything is firm & crisp.
In another saucepan, heat garlic w/ rest of oil the add diced peppers. Thrown fruits in, prawns & sausage, sauteing for 60 secs. Add rum then cook 1 more min to have alcohol burned.
Add rice in, tossing carefully ’til thoroughly mixed, adding more chicken stock as needed.
You mound your paella on plate. Have it garnished w/ 2 pineapples spears, chives & starfruit slices as you please.

Ingredients:
2 qts of drained oysters
1/2 c of finely-chopped scallions
1/2 c of finely-chopped parsley
2 Tbsps juice of lemon
2 c of fine-cracker crumbs
1/2 c of melted butter
1 Tbsp of Worcestershire sauce
Pepper
Salt
Tabasco sauce
6 Tbsps of milk
Paprika
6 Tbsps of light-cream
Instructions:
Arrange one oyster layer in the bottom-part of buttered 2-qts shallow bake dish. You sprinkle over the oysters w/ 1/2 parsley, 1/2 onions, 1/2 juice of lemon, 1/2 butter, 1/2 crumbs, 1/2 Worcestershire, 1/2 salt, 1/2 pepper & 1/2 Tabasco. Repeat layering once, ending w/ paprika.
Create small holes of even spaces in the oyster-mixture prior to baking. You pour the cream mixed w/ milk onto the holes. Have dish baked at three hundred seventy-five degrees Fahrenheit for half an hour ’til firm.
