Clams Casino Recipe
Ingredients:
Paprika
1/4 c of parsley; minced finely
2 Tbsps of Parmesan
1/2 tsp of oregano
4 pcs of bacon slices; crushed to bits
1 c of crumbs (bread)
2 pcs of garlic cloves; minced
1/4 c of pepper (green); minced finely
1/2 c of onion; minced
1 Tbsp of butter
2 Tbsps of olive oil
24 pcs of clams (Cherystone)
Olive oil
Instructions:
Preset oven (450 degrees F).
Clean clams thoroughly, and throw away clams that have opened up. Place in a baking dish then bake ’till clams open up, throwing away those that didn’t open.
Peel off meat inside then mince. Reserve half of the number of shells left. Saute the onions, garlic and pepper. Turn off fire then transfer onions to a bowl.
Add the crumbs, oregano, bacon bits, Parmesan then clams. Mix thoroughly. Transfer mixture onto clam shells the dust with paprika and parsley.
Pour a small amount of olive oil over then bake seven minutes ’till nicely golden. Best served hot.

Shrimp-Stuffed Bell Peppers Recipe
Ingredients:
6 large-sized bellpeppers
3 garlic cloves; minced
2 minced onions
4 Tbsps of veggie oil
1 tsp of celery; minced
1/2 lb of shrimps; shelled & cleaned
1/2 tsp of pepper (black)
1 tsp of Worcestershire-sauce
1 bayleaf
1 tsp of salt
8-10 toast sliced
A pinch thyme
1 large egg
Butter
Breadcrumbs
Instructions:
Split the peppers, have them cleaned & trimmed. Boil them for 3 mins then remove them form the water & cool. Finely chop & set the trimmings aside.
Place garlic & onions in oil, cook ’til browned. You add the trimmings in. Have the shrimps finely cut then add into garlic & onions. Add seasoning & celery then cook about 10 mins.
Have toast moistened. Combine shrimp-mixture & onions then stir egg in. Continue cooking for 5 more mins. You stuff the halved peppers then lay them flat into prepared pan.
Generously sprinkle w/ breadcrumbs then dot w/ softened butter. Have dish baked for about 20 mins at four hundred degrees Fahrenheit.

Sugar and Spice Baked Shrimp Recipe
Ingredients:
1 c of sugar (granulated)
3 tsps of salt
1/4 c of Hennessy-Cognac
1/4 c of Grand-Marnier
1 garlic cloves (large); peeled & minced

1 Tbsp juice of lime
1/2 tsp of cayenne powder
1 Tbsp of minced ginger
1/4 tsp of turmeric

Instructions:

Ingredients:
1 pc of lemon
Dusting garlic salt
Sprinkling of hot sauce (Tabasco)
1 Tbsp of Worcestershire sauce

1.5 sleeves of cracker (Ritz); crumbled
Instructions:

Layer the stuffing over the shrimps then pop in the oven for fifteen minutes (400 degrees F). Serve lemon slices on the side.

Ingredients:
10 oz of frozen spinach; chopped
3 lbs of cooked medium shrimps; shelled & deveined
1 c of flour
1/4 c of butter
3 c of skimmed milk

Ingredients:
Bell peppers (red and green); sliced into rings
Salt
Pepper
1 lb of crab meat (sans shells)
1/2 tsp of seasoning (Old Bay)

8 whole eggs; whisked
2 c of milk
2 c of Cheddar
4 c of croutons (unseasoned)
4 Tbsps of butter
Instructions:
Preset oven (325 degrees F). Generously coat baking pan with butter. Layer croutons at the base of the pan then sprinkle cheese over croutons. Set it aside.
Mix together eggs, Old bay, mustard, pepper and salt. Decant the egg sauce over top of the Cheddar then layer the crab meat over.
Pop inside your oven for fifty minutes then let it stand ten minutes. Sprinkle rings of pepper over top.

Ingredients:

1 c of crumbs (soda crackers)
1 lb of sausage (pork); grounded
2 whole eggs
1 can of clams; diced
Instructions:
Clean and drain the clams. Dice finely. Mix together, clams, soda cracker crumbs, eggs, ground pork, salt and pepper.
Place inside a bread pan then bake for forty minutes (350 degrees F). Best served hot.

Broiled Shrimp in Beer Recipe
Ingredients:
Juice from 1/2 pc of lemon
1/2 c of water
24 pcs of shrimps (large)
1/4 tsp of salt (sea salt)
1 Tbsp of parsley

6 Tbsps of butter (softened, sweet)
Instructions:
Preset broiler. Mix together butter and juice from half a lemon, salt, then the garlic, parsley and shallots. Clean and remove shells from shrimps then slice lengthways making sure to leave its tail attached.
Flatten shrimp then layer in baking dish. Brush the shrimps generously with butter sauce then decant water inside the baking dish. Place in your broiler to cook for four minutes.
Transfer shrimps onto serving platters the decant the sauce on top of cooked shrimps. Best served hot.

Shrimp in Mustard Cream Sauce Recipe
Ingredients:
1 lb of large shrimps; shelled & deveined
1 minced shallot
2 Tbsps of veggie oil
3 Tbsps of dry wine (white)

Instructions:
Place skillet on top of mid-heat then cook the shallot about 5 mins in heated oil, stir often.

Ingredients:
1 lb of cooked & deveined shrimps
4 oz of canned mushrooms
1/2 c of cheese (Parmesan)
3 peeled hardboiled eggs; chopped

6 Tbsps of flour
4 Tbsps of dried sherry
3 c of milk

Instructions:

Ingredients:
1 lb of medium shrimps
1/4 c of onions; chopped
4 Tbsps of veggie oil

Ingredients:
2 lbs of raw shrimp (jumbo); shelled then deveined
2 c of flour
3 pcs of beaten eggs

Ingredients:

2 lbs of steamers
1 small shallot

1 c of beer

Transfer opened clams into bowl, keeping them warm. Pass boiled water through fine sieved into saucepan. Have the liquid heated over mid-heat ’til hot.

Ingredients:
Bread crumbs; buttered
1 lb of scallops

Ingredients:
1 tsp of Worcestershire-sauce
1 Tbsp cornstarch mixed w/ 1 Tbsp water
4 large-sized oranges

Ingredients:
1/4 c of onions; minced
1 & 1/2 lbs of raw shrimps; shelled
5 Tbsps of butter

1 & 1/2 c of sourcream

Instructions:
Have onions sauteed w/ 1/4 c butter ’til softened. You add the shrimps & saute about 3-5 mins ’til cooked. You transfer the mixture into hot dish then keep it warm.
Using that skillet, you saute the mushrooms over high-heat ’til browned. Then sprinkle w/ flour then cook while stirring about 2 mins. You reduce to moderate-low heat then add shrimp-mixture, pepper, salt & sourcream.
Stir while cooking for 2-3 mins ’til heated thoroughly. Best when serve w/ rice & artichokes

Baked Stuffed Shrimp Recipe III
Ingredients:
1 c of bread crumbs (seasoned)
3/4 size bread loaf (French bread)
Black pepper
1 lb of crab meat
1 bunch of parsley (fresh); minced
1 bunch of scallions; diced
1 pc of onion (large); minced
3 pcs of Laurel leaves
6 Tbsps of butter
30 pcs of shrimps
6 pcs of celery ribs; diced
Salt
Instructions:
Clean and remove shells from shrimp, leave the tail on. De-vein then slice in the middle to resemble a butterfly. Place inside the fridge.
Saute onions, Laurel leaves, and celery until onions are soft. Add the scallions then parsley. When cooked, take away the Laurel leaves.
Dot holes in your bread, soak in water then press out almost all water. With your hands break it apart into smaller pieces then throw in a bowl. Mix in the celery mixture then the crab meat. Season with pepper and salt.
Scoop, using your hand, a few amounts of this dressing then wrap shrimps with it. Dust shrimps with crumbs then layer in a baking pan. Pop in the oven for half an hour (350 degrees F).

Avocado Crepes with Crab Recipe
Ingredients:
Butter
Salt
Pepper
1/2 c of cheese; grated
1.5 lbs of crab (meat)
1 Tbsp of Worcestershire sauce
2/3 c of Gruyere; cubed
3 c of cream sauce
3/4 c of water
3/4 c of milk
6 whole eggs
1 pc of avocado (large)
Instructions:
Mash up the avocado then add the eggs, salt and flour. Mix well until you get a smooth texture. Stir the water and milk in next. Mix well.
Melt one third teaspoon of butter inside a sauce pan. Add four tablespoons of avocado mixture then fry as if frying a pancake.
Cook for a minute then flip to the other side then cook for another minute. Repeat until all the batter has been used.
Heat the cream sauce, then add your Gruyere. Simmer ’till sauce has thickened. Turn off fire then mix in the Worcestershire.
Add the crab meat into the sauce. Next spoon ample amounts of crab meat mixture onto each avocado pancake. Roll it up and place inside a baking pan, folded side down. Dust with more cheese then bake ’till cheese has melted. Good for six persons.

Ingredients:
3 c of water
3 Tbsps of butter
1 lb of unpeeled medium fresh shrimps
1/2 c of milk
1/3 c of flour (all-purpose)
2 chopped scallion

1 Tbsp of chopped parsley (fresh)
1/2 tsp of Beau-Monde seasoning
1/4 tsp of pepper
1/4 tsp of salt
1/4 tsp of hotsauce
1/4 tsp of paprika
1 c of Italian seasoned breadcrumbs
1 egg (large); lightly-beaten
1/4 c of veggie oil
Instructions:
Cook shrimps in boiling water for 3-5 mins, drain then rinse w/ running water. Have shrimps peeled & deveined then chop & set them aside.
Have butter melted in thick saucepan placed over low-heat. You add the flour & stir ’til smoothened. Cook about 60 secs, stir constantly.
Add milk gradually into saucepan then cook mixture over mi-heat, stir often ’til mixture becomes bubbly & thick. Add the scallions, parsley, juice, seasoning, salt, pepper ,paprika & hotsauce.
You combine 1/2 c breadcrumbs, egg & shrimps then pour over sauce-mixture. Form into four patties then dredge onto crumbs.
Cook in heated oil in thick skillet over mid-heat ’til golden-brown, turn once. When cooked, drain well on paper-towels.

Ingredients:
1/2 c of butter (unsalted)
1 Tbsp of flour
1 c of cream (whipping)
1/4 c of wine (sherry)

Parsley (to taste); chopped
1 c of mayonnaise

Instructions:
Melt the butter inside the saucepan then add flour and stir constantly till smooth. Slowly add the cream then add sherry, Worcestershire, salt, red pepper, celery, and parsley; cook gently till thick.
Let it cool then add the mayonnaise; stir thoroughly. Add shrimp and crabmeat onto sauce then spoon onto buttered baking dish or casserole. Sprinkle over cheese and crushed chips. Bake (325 degrees F) for 25 mins.

Ingredients:
1 lb of fresh shrimps
1/4 c of celery; chopped
