Coconut Fried Shrimp Recipe
Ingredients:
1 lb of small shrimp (raw); shelled then deveined
1/3 c of juice (lemon)
1/2 tsp of salt
1-3/4 c of flour
1/3 tsp of ginger (ground)
3 tsps of curry powder
2 tsps of baking powder (Calumet)
1-1/4 c of milk (skimmed)
1/2 c of Coco Casa (cream of coconut)
3-1/2 oz of canned coconut flakes
Oil for frying
Instructions:
Combine salt, juice, curry, and ginger; mix them well and marinate the shrimp for 1-2 hrs. Drain thoroughly. Combine 1-1/2 cups of flour, milk, cream-of-coconut, and Calumet; mix the batter thoroughly.
Coat the shrimp onto remaining plain flour and dip onto the batter then coat with coconut flakes. Fry them in heating oil for 2-3 mins; do this in batches.
