Grilled Texas Shrimp Recipe
Ingredients:
1/4 c of oil (vegetable oil)
1/4 c of tequila
1/4 c of vinegar (red wine)
2 Tbsps of lime juice (Mexican)
1 Tbsp of ground chiles (red)
1/2 tsp of salt
2 pcs of garlic cloves; chopped finely
1 pc of bell pepper (red); chopped finely
24 pcs of large shrimp (raw); shelled and deveined, but with tail intact
Instructions:
Combine oil, tequila, vinegar, lime juice, chiles, salt, garlic, and red (bell) pepper inside a bowl. Add shrimp and toss till coated well. Place inside the refrigerator for one hour, covered.
Take shrimp out from the marinade, but save the marinade. Secure the shrimps onto (metal) skewers, about four pieces per skewer. Grill above moderate coals for 2-3 mins per side till pink; turn once to grill other side.
Boil the marinade inside a (nonreactive) saucepan. Once boiling, reduce the heat into low; let it simmer for 5 mins, uncovered. Serve hot along side shrimp.
