Jumbo Shrimp Parmigiana Recipe
Ingredients:
2 lbs of raw shrimp (jumbo); shelled then deveined
2 c of flour
3 pcs of beaten eggs
2 c of breadcrumbs (seasoned)
1/2 c of vegetable oil (or canola oil)
2 c of tomato sauce (basic)
1/2 lb of shredded cheese (Mozzarella)
1/2 c of grated cheese (Romano)
1 Tbsp of oregano (dried)
1/4 c of parsley (fresh); chopped
Instructions:
Rinse shrimp clean and pat them dry with paper towels. Dredge the dry shrimp on flour, then on eggs, then on seasoned breadcrumbs. Heat the oil on a skillet then fry the shrimps in batches till golden.
Arrange fried shrimp onto baking dish in one layer. Add tomato (sauce), Mozzarella cheese, Romano, and oregano, in layers. Bake inside preheated oven (400 degrees F) for ten mins till cheeses melt. Sprinkle parsley on top.
