Lobster Newburg Recipe
Ingredients:
2 c of lobster meat (fresh or canned)
or
2 pcs of lobster tails (fresh, medium-small)
3 Tbsps of cornstarch
1/2 c of butter
1/2 tsp of MSG
1/2 tsp of salt
1 tsp of paprika
1-1/2 c of milk (whole)
1 c of cream (heavy)
2 pcs of beaten eggs
1/2 c of sherry
Instructions:
If using (lobster) tails:
Boil water on a kettle then add two tablespoons of (tarragon) vinegar with one teaspoon of salt. Once boiling, add the tails then continue to cook for twenty mins till it becomes pink. Let it cool then take out from the liquid; cut to pieces.
Saute (lobster) meat with butter on a skillet above moderate heat; don’t brown it and cook them gently.
Combine seasonings and cornstarch; add onto lobster then add cream and milk; stir constantly and gently till thick. Add the eggs and gradually add the sherry, don’t let mixture boil.
