Malibu Stir Fry Shrimp Recipe
Ingredients:
1 Tbsp of oil (peanut oil)
1 Tbsp of butter (unsalted)
1 Tbsp of garlic; chopped finely
1 lb of shrimp (medium); shelled then deveined
1 c of mushrooms; sliced
1 pc of scallion bunch; sliced
1 pc of red pepper (sweet); seeded then cut thinly to 2-inch strips
1 c of peas (fresh or frozen)
1 c of rum (Malibu)
1 c of cream (heavy)
1/4 c of chopped basil (fresh or 1 Tbsp dried)
2 tsps of chili paste (ground)
or
2 Tbsps of chili sauce (prepared)
Juice from 1/2 pc of lime
Freshly ground pepper (black)
1/2 c of coconut (shredded)
1 lb of fettuccini (cooked)
Instructions:
Heat butter and oil on a pan above medium-high heat. Add the garlic and cook for one min. Add the shrimp and cook for two mins till pink then add the vegetables; fry them for two mins. Add the rum then let it simmer for two mins.
Add the cream then let it simmer for five mins. Add the rest of seasonings and toss mixture with fettuccini and coconut.
