Pan-Fried Soft-Shell Crabs Recipe
Ingredients:
1/2 c of flour (all-purpose)
Ground pepper (black)
1 tsp of dry oregano
Salt
1/2 c of milk
6 cloves garlic; minced
2 large eggs
3 c of saltine crumbs (cracker)
8 softshell crabs
3 Tbsp of butter (unsalted)
Instructions:
Combine pepper, salt, oregano & flour in shallow bake dish. In another platter, you mix the eggs & milk. Place garlic & crumbs in processor then pulse ’til crumbs become finely ground. You transfer the crumbs into separate dish.
Heat oil & butter in large thick skillet placed over mid-high heat then lightly dip every crab into flour, then into egg-mixture & finally into crumbs.
Cook crabs in skillet, pan-frying them for 6-8 mins, turn once then drain well. Serve at once.
