Pepper-Poached Oysters Recipe
Ingredients:
24 oysters (large) in shells w/ liquor
1 & 1/2 Tbsps of peppercorns (black)
8 oz of bottled clam-juice
2 roasted cloves garlic
1/2 tsp of salt
1 bayleaf
1/4 tsp of allspice (ground)
3 Tbsps of extra-virgin oil
Lime slices
Juice from a lime
Instructions:
You drain oysters well. You pour over liquor slowly into saucepan then you add clam-juice enough to have your oysters covered. Boil then you add your oysters then have the heat reduced.
Simmer & poach your oysters for 3-4 mins ’til edges curl-up & plump. Transfer oysters into platter then reserve its liquid.
Combine allspices, salt, garlic & peppercorns in processor ’til formed into paste. You add 2 Tbsps of poached liquid then blend paste.
You drop bayleaf into liquid then boil. You reduce liquid into half-cup then you add prepared paste as well as your oysters. You remove saucepan directly from heat then you add juice & oil.
Have oysters refrigerated while submerged in poaching water, covered, about 30 mins-1 hr.
