Steamers in Beer Recipe
Ingredients:
2 lbs of steamers
1 small shallot
1/4 c of butter; unsalted
1 Tbsp of finely-chopped flat-leaved fresh parsley
1 c of beer
1/4 tsp of salt
Instructions:
Thoroughly clean clams then chop shallots finely. Have the shallot cooked w/ 1 Tbsp butter in saucepan placed over mid-heat. Stir for 2-3 mins ’til softened. You add the clams & beer. Steam w/ cover for 4-5 mins.
Transfer opened clams into bowl, keeping them warm. Pass boiled water through fine sieved into saucepan. Have the liquid heated over mid-heat ’til hot.
Add 3 Tbsps butter. You remove the pan then add in salt & parsley. Serve the clams w/ dipping-sauce.
